Nutrition assingment

Healthcare professionals would be thrilled if individuals made decisions about what to eat based on a solid knowledge of what constitutes a “healthy diet.” Unfortunately, that is not typically the case. Many people do not know what constitutes a healthy diet. There are also those who do know but make less healthy choices for several reasons.

The food choices that people make are influenced by a variety of factors. Factor-categories include, but are not limited to, environmental cues, socioeconomic realities, cultural/religious beliefs, and the availability of foods in the community.

In a 3-page paper, written in APA format using proper spelling/grammar, address the following:

  1. Explain what nutrition is and why it is important.
  2. Describe the characteristics of a healthy diet and provide supporting examples.
  3. Identify at least two (2) factors (other than culture) that can impact a person’s food choices and provide a specific example for each.
  4. Research a culture (e.g., ethnic, religious, dietary) where specific food restrictions are dictated and address the following:
    1. Describe the restrictions.
    2. Explain how the restrictions could make it difficult for an individual to achieve a healthy diet.
    3. What dietary alternatives could be incorporated to overcome the dietary restrictions?
  5. Cite at least 3 credible references and present the resources in APA format on the References page.

Examine food consumption on a deeper than concrete level and is inclusive of yet goes beyond sustenance, recipes and/or taste in Thailand culture

According to Harris, Lyon and McLaughlin: “…everything about eating including what we consume, how we acquire it, who prepares it and who’s at the table – is a form of communication rich with meaning. Our attitudes, practices and rituals around food are a window onto our most basic beliefs about the world and ourselves” (Harris, Lyon and McLaughlin, 2005, pp. VIII-IX).

In Part 3, you will examine food consumption on a deeper than concrete level and is inclusive of yet goes beyond sustenance, recipes and/or taste in Thailand culture. Specifically, please consider the following when you draft the post:

  • Highlight the cultural and social significance of food and “eating” in Thailand culture.
  • Describe people’s attitudes, practices and rituals around food, such as food traditions, food patterns eating habits, and dining etiquette.
  • Identify at least three basic beliefs that have shaped the food culture and been expressed in people’s attitudes, practices and rituals towards food in Thailand culture (e.g. gender/family/work roles; ideas about nutrition and health; family values; tradition; relationship to nature and surroundings).
  • Synthesize the meanings of food and “eating” in Thailand culture.

Please have the following requirements in mind when crafting your post:

  • Your post writing should be a cohesive research paper, not a Q&A session.
  • Use at least THREE references from library resources and credible online sources to support your opinion.
  • Use APA styles for citations and references.
  • The final draft should be at least 500 words. However, depth matters more than length.

Introduction:

Early childhood educators often face challenging situations in the workplace, and it can sometimes be difficult to know how to proceed. When you encounter a tough situation, the first question you should ask yourself is, “Does this issue concern right and wrong, rights and responsibilities, human welfare, or individuals’ best interests?” If you answer yes to this question, you are facing an ethical issue.

How you respond to an ethical issue depends on whether the issue is an ethical responsibility or an ethical dilemma. Ethical responsibilities are mandates that are clearly spelled out in the NAEYC Code of Ethical Conduct: they describe what early childhood educators must and must not do. It is important to remember that when you encounter a situation that involves an ethical responsibility, you must follow the Code’s clear directions. Then you can be confident that when you have done the right thing, the Code is there to back you up. You can rely on it to help you explain why you made a difficult or unpopular decision.

When you determine that a situation involves ethics and that it is not a clear-cut responsibility, it is likely to be an ethical dilemma. A dilemma is a situation in which the legitimate needs and interests of two or more individuals or groups are in conflict with one another. Resolving a dilemma forces you to choose between two or more morally justifiable courses of action, each of which has some benefits but also some costs.

Instructions:

Below are two situations. For this discussion, select one of the situations. Address the five questions below, using the NAEYC Code of Ethical Conduct (Links to an external site.)

  1. Identify the problem and discuss why it involves ethics.
  2. Identify which, if any, of the Code’s Core Values (from page 1) apply to this situation.
  3. The teacher often has conflicting responsibilities. What does she owe to the child, the family, or the center where she works? (In doing an ethical analysis, it can be helpful to summarize the conflicting responsibilities as a choice between alternatives: “Should the teacher do _________ or should she do _________?”)
  4. Look for guidance in the NAEYC Code of Ethical Conduct. Carefully review its Ideals and Principles, particularly those that apply to responsibilities to children and families. List three relevant items in the Code and indicate how you prioritized their importance.
  5. Based on your review of the Code and using your best professional judgment, describe what you think is the most ethically defensible course of action for the teacher.

Situation 1 – Victor and the princess dress

Victor enjoys playing dress-up in the dramatic play area. He is a quiet and reserved child who usually follows other children’s lead. But when engaging in dramatic play, Victor’s leadership shines as he collaboratively creates scenarios with his classmates. He is particularly adept at playing characters such as firemen, princesses, bumblebees, and moms. One day Mr. Jackson, Victor’s father, who rarely comes to the center, arrives to pick up Victor and sees that he is in a pink princess costume. He curtly tells Marge, Victor’s teacher, that he does not want her to allow Victor to play in the dress-up area in the future. He then orders Victor to change, and they quickly leave. Marge is taken aback by Mr. Jackson’s behavior.

The center is devoted to fostering relationships with all of its families, and Marge has recently made great strides in attracting Victor’s family to potlucks and school workdays. The staff collectively believe that, in addition to building children’s imaginations, dramatic play enhances their social and communication skills and is an integral part of the learning process that gives children opportunities to develop abstract
thinking, literacy, math, and social studies skills.

What should Marge, an ethical teacher, do? How could Marge use the NAEYC Code to guide her thinking and decision making in this situation? (Use the 5-step framework above to formulate your answer.)

Situation 2 – Jane and her milk

Jane, a petite just-turned-3-year-old is new in Kristen’s class. Her father brings her to school each day at breakfast time. As part of the USDA food program, the school serves milk each day at breakfast and lunch. Like a number of children in her class, Jane refuses milk and drinks water instead. Kristen allows children to make this choice. One day Jane’s father tells Kristen that he and his wife do not want her to allow Jane to drink water until she has drunk her milk. Kristen assures them that she will encourage Jane to drink her milk.

At the next meal, Kristen tells Jane that her family wants her to drink milk so she’ll be healthy and grow strong. Jane sobs uncontrollably. Kristen comforts her and allows her to drink water. She tells Jane she will talk to Jane’s father about letting her drink water. Jane’s eyes grow wide and she sobs even harder, saying, “Don’t tell Daddy! Don’t tell Daddy!”

What do you think a good early childhood educator should do? Should Kristen honor the wishes of the family or allow Jane to continue to drink water instead of milk? How could Kristen use the NAEYC Code to guide her thinking and decision making in this situation? (Use the 5-step framework above to formulate your answer.)

Week 4 Discussion What Do We Know?

22 unread replies.66 replies.

Growing up, my mom usually packed my lunch for school. I was totally happy eating the same thing day after day- typically a sandwich of some kind on whole wheat bread. Most kids in my grade school packed their lunches, but in high school things changed a little. I would pack my lunch, but then I’d also see what was being served in the lunch line. I’d usually buy some french fries and/or a soda (which I still love but now it is diet soda), to “round out” my healthy meal. There were lots of high calorie, high fat foods to choose from.

I had friends (in grade school and high school) who bought their lunches daily. Sometimes there would be salad on their plates, but more often it was things like pizza and tator tots. That’s why I wasn’t surprised to read about a new study which found that kids who regularly purchased school lunches were more likely to be obese than those who brought their lunches.

In this study of sixth graders, published in the American Heart Journal, it found that students were 29% more likely to be obese if they ate school lunches. “Of the 142 obese children in the study for whom dietary information was known, almost half were school-lunch regulars, compared with only one-third of the 787 who were not obese.” More than two hours per day in front of the T.V. also increases the risk of childhood obesity but surprisingly, not by as much- only 19%.

Although many schools have relied on high energy food with little nutritional value in the past because it’s cheaper, that could soon be changing. “Under a federal law passed last December, Department of Agriculture guidelines will limit the number of calories served at every school meal and require programs to offer a variety of fruits and vegetables.”

Are you surprised by these findings? What kind of experience have you had with school lunches? When you reply to others make sure to compare your experiences to their own and extend the discussion by explaining what impact these changes might bring.

Case Study – Security

Case Study – Security

Scenario

A large fast-food chain unveiled a new touch screen register for its franchises. Each cashier was assigned a user ID and password combination to log in to the register. The system allowed the incorrect password to be entered four times before the register would lock and require a manager to unlock it with a key card. To prevent unauthorized access, the registers would lock after three minutes if the screen was not touched. When the register locked, only the cashier who was logged in prior to it locking could unlock it without a system restart.

After a few days in operation, restaurant managers started complaining about the amount of time they were spending unlocking the registers. Some cashiers were forgetting their user ID and password, so other cashiers would log in for them. It also seemed that the button layout made it easy for the cashiers to key in the incorrect password. The managers also complained that cashiers would leave for a break or end their shift and forget to log out of the locked register. The managers would have to reboot the system, a three- to five-minute process in order for the next cashier to log in. Additionally, managers noticed that grease was building up on the touch screens, making them less responsive.

Instructions

Write a five- to eight-page paper in which you:

  1. Analyze the new system and determine the design issues with this new system.
  2. Describe how you would correct the design issues with the system to make the restaurant managers happy.
  3. Create a design plan that:
    • Lists and explains the tasks associated with improving this interface.
    • Contains at least six tasks.
    • Includes realistic time estimates for each task to be completed.
    • Analyzes the development of the system in your plan.
    • Analyzes the testing of the system in your plan.
    • Analyzes the implementation of the system in your plan.
  4. Examine how this system balanced security and usability, and explain the challenges of incorporating system security and system usability into a design.
  5. Suggest changes that could be made to the security of this system to still meet security objectives but make the system more usable.
  6. Use Microsoft Visio or an open source alternative, Dia, to create a graphical representation of your proposed interface. Note: The graphically depicted solution is not included in the required page length.
