The main issue that affects a restaurant’s profitability is customers’ unpredictability (Walker, 2016). At times, customers chose to use a hotel’s restaurant, while they might opt to visit another hotel in other cases. Getting customers to always have a meal at the hotel’s restaurant is quite challenging because when customers go to other hotels, it means that employees are underutilized, an aspect that increases labor costs.
